Indian Coconut Rice

1 cup of organic jasmine rice
1.25 cups of water
1 cup of coconut milk
2 cinnamon sticks
nice pinch of sea salt

Mix everything in a nice pot, bring to a boil, cover lid, and cook over the lowest flame or on the lowest heat possible. Check after 15 - 20 minutes, once the liquid is gone, take off of heat and let stand with cover for 15 more minutes.

Loving Indian Curry

1 purple or yellow onion - cut small
6 cloves of garlic - minced
2 inch stick of ginger - minced
2 to 3 tomatoes - chopped small
2 yams - cut small
2 carrots- cut small
hand full of fresh cilantro
curry powder or curry paste
2/3 to 1 can of coconut milk
1 - 3 Tablespoons sea salt

On a larger pot bring water to boil with chopped yams and carrots. Boil until yams and carrots are soft. In a frying pan (prefer cast iron) - heat and add 1/8 inch of water (don't cook oil, use water- once oil is cooked it's toxic to the body) and add onion, garlic, ginger, and curry about 1 and a 1/2 TBS of curry paste or curry powder, and a sprinkle about teaspoon of sea salt in the pan and sauté. After about 4 minutes of sautéing, add the tomatoes, and maybe just a bit more of water if the liquid has evaporated. Cook tomatoes in the mixture for about 10 more minutes, until the tomatoes have created a paste with the mixture. Once yams and carrots are soft, drain the water, and take the frying pan mixture and mix into the bigger pot with the yams and carrots (make sure you drained the water). Add the can of coconut milk, and about Tablespoon of Miracle Sea Salt. Mix up very well, and give a taste test, if it's a little bland, add more sea salt. If the curry isn't strong enough, add about 1/2 teaspoon at a time and mix in until desired taste is met. Add a handful of fresh cut cilantro and mix well. Serve this over Indian Coconut Rice!

Coconut Strawberry Dream Pie

Crust – Portion for One Pie Pan

Take a nice handful of almonds and soak them for 20 minutes – drain well
Take a half a lemon peel from an organic lemon and put in a food processor (quizinart) and process – add to a mixing bowl
Add the almonds to the quizinart and process until they are chopped up very well – add to mixing bowl
Add a handful of very shredded coconut to mixing bowl
Add a nice pour of Agave sweetener to mixing bowl
Add a touch of cinnamon
A Very small touch of sea salt

Mix very well in mixing bowl with your hands (Yes – you get to play and get your hands gooey! Take a test sample and if it taste good – your set, if it’s a little bland, add more Agave until it’s sweet and good! Now take the Pie pan and sprinkle it with a small amount of shredded coconut flakes (to prevent sticking). Now take the crust mixture and gently sprinkle it on the pie pan and push down gently and form a crust for the Pie.

Now take a bunch of very ripe bananas and place them side by side next to each other on the pie pan. Basically you don’t want to see the crust through the bananas, so squeeze them together very tight.

Coconut Cream Sauce for Dream Pie

Fill up a blender 1/3 full of shredded coconut. Now add 1-2 teaspoons of good vanilla powder (you can use liquid vanilla, although it’s not as tasty). Add a very small touch of sea salt. Add a nice pour of Agave. Add water to the blender (not too much, but enough for it to mix – so start off with little and keep adding more – because if you add to much, you have a liquid loose sauce, and we are creating a gooey cream). I personally come back and keep adding water little by little and stirring with a spoon and blending until I have a thick cream. Taste test – does it need more Agave?

Now pour this cream over the entire pie. Slice some sweet strawberries to place on the top of the pie! You are now set! Place in the fridge for at least three hours before eating so it can set!

Chocolate Goo Ball Love

In a food processor (quizinart) add a few handfuls of pecans.
Add about 7 – 10 medjool dates – make sure to remove the pits
Add about 2 – 3 Tablespoons of goji berries
Add a nice handful of shredded coconut
Add 1 Tablespoon of Raw Maca
Add 1 Tablespoon of Mesquite
Add a small touch of sea salt
Add about 3 – 4 Tablespoons of Raw Cacao
Add about 1 – 2 Tablespoons of Agave

Add all ingredients and process until the mixture is all blended and will start to create a ball in the food processor. I usually blend for a moment and taste test. Does it need more Agave? Finish blending. Now place more shredded coconut on a plate and take about 1 – 2 Tablespoons of the blended goo and roll into a ball, and cover with shredded coconut and place on a plate. Do this until the goo is all formed into many balls. I personally keep them in the fridge and are divine!

Raw Mexican Taco Tacos

Taco Meat

3 cups of almonds
3 - 5 TBS Mexican Seasoning or mixture of spices including 2 TBS Oregano, 1 1/2 TBS Chili Powder, 1 TBS Cumin
4 cloves garlic
squeeze in 3/4 - 1 full lemon
1/4 to 1/2 jalapeño
handful of cilantro
1 TBS miracle sea salt

Add ingredients and puree mixture in a food processor (quizinart) until looks like taco meat. Mix and taste test. You may need to add more lemon, Mexican seasoning, or salt for desired taste.

Guacamole o'mole

4 RIPE avocados
1 tomato
3 cloves garlic
5 Tablespoons minced purple or yellow onion
Teaspoon Cumin
1 Teaspoon to 1 Tablespoon of miracle sea salt
1/4 lemon
1/4 lime
handful of chopped cilantro

Mash up the avocados in a bowl. Add the chopped tomatoes, minced garlic, onion, cumin sea salt, lemon and lime, and mix well. Mix in the cilantro and taste test. You may need to add more salt, lemon, and/or lime.

Raw Live Cheese

1 handful of macadamia nuts
1/4 red bell pepper
1 - 1 1/2 Tablespoon Dill
1/2 to 1 lemon of juice
teaspoon Miracle Sea salt

Mix in a food processor (quizinart) until cheese consistency. Taste test, may need more dill or sea salt.

Live Yum Salsa

Quizinart Batch - put 3 tomatoes, 3 cloves garlic, hand full of fresh cilantro, squeeze 1 lemon of juice and 2 teaspoons of sea salt and blend.

Now chop up 2 tomatoes, 1/4 of an onion, and more cilantro and mix into mixture. Mix by hand. Taste test - you may need more lemon and or sea salt and or tomatoes.

For the taco we will use leafy lettuce. Red lead lettuce or Big Green Leaf lettuce make perfect burrito wraps. Spoon in a nice amount of taco meat, add some guacamole, salsa, and sprinkle some raw cheese and wrap like a taco/burrito.
